Olivier Cloutier is an 18-year-old Cégep student, in the Rimouski region of Quebec, who won (among others) the prestigious scientific prize of the Super Expo-sciences Hydro-Quebec, thanks to a masterful experimental project in medicinal chemistry, inspired by evolutionary and traditional Inca medicine.
His project was neither more nor less a search for a cure against cancer thanks to the seeds of chia Salvia hispanica!
Her relationship with the chia seed begins with her mother, who one day brings back a bag of these sacred seeds from South America.
She explains to him all the benefits of the chia seed that she uses to lose weight, its incredible nutritional values, its cosmetic virtues, except that Olivier is a scientist, and the Inca stories interest him, but he prefers to study the small seed. like laboratories!
He says, “I started by analyzing the composition and molecular structure of chia seeds. I then became interested in the history of the chia seed and its different uses among the Mayas and the Aztecs, 5000 years ago: medical, religious, food, etc. ”

With the help of researchers from his region, Olivier first selected seed varieties of the Salvia Hispanic variety.
Olivier isolates polyphenolic compounds by following a protocol of extractions, filtrations, and concentrations on a rotary evaporator. It then obtains a solid residue containing the active compounds of chia seeds.

Olivier Cloutier, therefore, notes that certain chia seed extracts have anti-cancer characteristics, making it possible to inhibit the proliferation of cancer cells, and even to promote the death of cancer cells, particularly colon cancer cells: colorectal cancer HCT116.
